I LOVE almond butter. I also love peanut butter, cashew butter, it doesn’t matter. Nut butter is my thing. Whether it’s on toast, in a sandwich, in a smoothie, I love how Almond butter is creamy, nutty, and packed with protein and healthy fats.

The one thing that I don’t love about almond butter is the price of it. It’s usually twice the cost of peanut butter, and I’ve seen it at over $15 for a jar in some stores. This is fine for occasional use, but I’d prefer to eat almond butter every day, so I love that I can make it myself for way less money.

Making your own homemade almond butter is easier than you think. I’m sharing all of my tricks and tips for making almond butter smooth, tasty, and easy.

How much this costs is going to depend on the price you pay for nuts. Buy them in the bulk section of your grocery store for the best deal. I love the bulk section for all sorts of things. Nuts, beans, grains, snacks, and candy are all much less expensive this way.
  6. Makes a Great Gift. Who wouldn’t love to receive a jar of fresh almond butter as a gift? Think about gifts for family members at the holidays, or for teachers, caretakers, or coworkers.

  • Raw Almonds – Buy your almonds raw so that you can roast them yourself. This is key to getting the smoothest, most delicious almond butter, and I’ll explain why later.
  • Salt – Salt brings out the flavor of the nuts. Just a small amount goes a long way.
  • Maple Syrup – This is optional, but I really love the extra bit of sweetness that maple syrup brings to this party. You can use any sweetener that you like, but I find that a liquid one like maple syrup or honey gives the best texture.

How To Make Almond Butter

Get your blender or food processor ready, it’s going to get a workout today. You can make this recipe in a standard food processor, or a high powered blender like a Vitamix. A regular blender won’t have the power for blending this recipe.

  1. Roast the Almonds: Preheat the oven and roast the almonds on a sheet pan for 10-12 minutes.
  2. Add to Blender: Remove almonds from the oven and add to the bowl of a food processor or the pitcher of a high powered blender.
  3. Blend: Blend for 4-5 minutes until liquified, smooth and creamy. You’ll see the nuts turn into a thick dough first, and with more time the mixture will thin out (see images above).
  4. Add Seasonings: Add salt and maple syrup and blend once more until combined. Any other desired flavorings can be added at this time as well.
  5. Store: Transfer into a glass jar and store, refrigerated, until ready to use.

Do I Need to Roast Almonds for Almond Butter?

Yes! Roasting the almonds is a very important step. You see, roasting nuts allows them to soften and begin to release their oils. When you blend warm nuts you’ll get a much smoother consistency to your nut butter.

If you buy almonds already roasted, you won’t have that benefit, and your nut butter will be dryer and chunkier. The same will happen if you blend raw almonds. I always recommend roasting nuts at home right before adding them to the blender for best results. Roasting almonds only takes about 10 minutes to do, and that time will be very well spent.

Your freshly ground almond butter will stay fresh in the refrigerator in a sealed jar for up to 2 weeks. It may even stay fresh longer than that, if it lasts that long. You’ll notice signs of spoilage (a bad smell) if it’s gone bad.

You’ll need to stir the almond butter before using it as the oil will separate from the solids as it sits.

  • Almond butter is, in my opinion, delicious on just about anything bread-y or sweet.Try my Bread Machine Bread.
  • One of my favorite healthy snacks is apple slices drizzled with almond butter and topped with chia or flax seeds.
  • I also love melting a bit of homemade almond butter and drizzling it over chocolate ice cream.
  • Try this almond butter with my Buckwheat Porridge or with any type of hot cereal.
  • Speaking of breakfast, this would also go great with French Toast, Pancakes or Waffles.
  • Use it to make granola! I have a delicious Peanut Butter Granola recipe, substitute the peanut butter with almond butter.

Ingredients

  • 2 cups (300g) raw unroasted almonds
  • ¼ teaspoon salt
  • 1-2 tablespoons maple syrup optional

Instructions

  • Preheat the oven to 350°F/180°C

  • Place the almonds in a single layer on a sheet pan, and roast for 10-12 minutes.

    I used the Ninja Food Processor and it would not turn the almonds into butter I blended for over a half hour and still nothing just crumbs.
    I don’t know why as Ninja is a good food processor.

Roasting them for just 10 minutes before blending allows the natural oils within the almonds to release toward the skin, which really helps in the blending process. So if you don't want to roast them, you will need to add some oil, about 2 or so tablespoons to help it become creamy.
