Calling all pickle lovers! A tangy and creamy dill pickle salad dressing recipe made with pickle juice, avocado, and olive oil.

And that's when we will learn who will be totally disgusted or totally on board with today's dill pickle salad dressing recipe. I'm not here to judge, but if you don't like pickles you're doing life wrong.

This is coming from the girl who ate pickle sandwiches. As in just bread, a little bit of mayo, and a mountain of dill chips. The ladies at the deli station in our college dining hall looked at me like I was crazy. Didn't stop me.

Ingredients

  • dill pickle juice
  • avocado
  • olive oil

Instructions

In a food processor or high-powered blender, combine 1 ½ cups of dill pickle juice and the flesh from 1 ripe avocado on high power.

Turn speed down to low, and slowly stream in ¼ cup of olive oil until fully combined. Store in the refrigerator for up to 5 days.

Pro Tips:

  • For an extra flavor boost, add a teaspoon of garlic powder, and ½ teaspoon dried dill.
  • If you like a little added texture, add a couple tablespoons of chopped pickle.
  • No avocado? Make this dill pickle vinaigrette instead!

To get that creamy texture, it's best to use a food processor or high powered blender. You could also use an immersion blender, but without one it is hard to fully blend avocado.

    Funny ! My favorite treat after school was pickle sandwiches with mayo and Velvetta cheese back in the 70's. When I'm not feeling well...that's still one of my comfort foods! Your my kinda a people! Trying the recipe right now. Throwing pickle juice down the drain induces an episode of mourning. Something I don't want to experience 🙂

    I love dill pickles! I also eat dill pickle sandwiches, but I do toast, butter and slices of pickles....the butter and pickles are super good together!

    This is delicious! I served it over a side salad with bacon cheeseburger casserole!! YUM! Oh also I didn't quite have enough pickle juice so I used a mixture of pickle juice, pickled okra juice and banana pepper juice!

      If you do not like avacados and you like peanut butter I would try the peanut butter almost like a peanut sauce with dill flavor like the consistency of Asian peanut dressing

    I hate to have to bring this to your attention, but you pour it down the CHUTE not the SHOOT. Two different things, spelled differently, sound the same, like pear and pair or knight and night. They are called hom*oohones.

      Hmm I haven't tried anything else for a creamy component, but know that you can't really taste the avocado in it. You can also make a vinaigrette-type of dressing and leave it out entirely. Hope this helps!

    I made homemade pickles. So my left over juice had fresh dill, garlic, red paper flakes and peppercorns. I blended it all up with a little grey poupon, a little mayo and an avocado. I loved it. Can't wait to make more pickles then use the juice again for a dressing. I might even have some small pickle chunks in my dressing. Who else was already putting pickles.in the salad? I love pickles and now this dressing makes me so happy. So sad I didn't know of this years ago. All that time wasted 🙁
