Why Eat More Fish?
As a Registered Dietitian, helping people find delicious ways to incorporate nutritious foods is one area of my expertise.
Fish is definitely a nutritious food that many of us could eat more of. Aiming for 2 servings of fish per week has been recommended by organizations like Health Canada and the American Heart Association, as research has found that doing so is associated with a lower risk of things like heart attack and stroke for people with existing heart disease.

To make this parmesan crusted fish recipe, you’ll need:
- Fresh haddock filets
- Cooking spray
- Light mayonnaise
- Dijon mustard
- Fresh garlic
- Panko bread crumbs (I use whole wheat)
- Parmesan cheese – specifically Parmigiano Reggiano
- Fresh parsley
- Dried chives

How to Bake Haddock in the Oven:
Baking haddock in the oven is my favourite way to prepare it. Its quick and honestly pretty easy! The trick really is just not to overcook it, as it doesn’t take long.

Things to Serve With Parmesan Crusted Haddock:
To create a well-rounded and balanced meal, I recommend serving the baked parmesan haddock with a grain or starch (like potatoes or rice) and at least one serving of non-starchy vegetables. Here are some ideas:

- Pesto Roasted Potatoes
- Quinoa or wild rice
- Roasted Delicata Squash or Air Fryer Delicata Squash
- Garlic Green Beans
- Homemade Healthy Caesar Salad
How to Store Fish Leftovers:
While this fish recipe is definitely best served immediately, you can store leftovers in the fridge for 24-48 hours.

Ingredients
For the Haddock:
- 1 lb haddock filets
- 2 tbsp light mayonnaise
- 1 tsp dijon mustard
- 2 cloves garlic, minced
For the Herb & Parmesan Crust:
- 1/2 cup whole wheat panko crumbs
- 2 tbsp grated parmesan cheese, (parmigiano reggiano)
- 2 tbsp fresh parsley, finely chopped
- 1/2 tsp dried chives
- 1/4 tsp salt
- 1/4 tsp black pepper
Equipment
1 Oven-safe baking dish
Instructions
Grease or spray baking dish with cooking spray. Arrange haddock filets in the dish and pat dry.
In a small bowl, whisk together the light mayonnaise, dijon mustard, and minced garlic.
Brush the top of haddock filets with the mayonnaise, dijon, and garlic mixture to coat.
In a separate medium mixing bowl, stir together all of the herb & parmesan crust ingredients.
Using a spoon, gently sprinkle the crust mixture on top of each of the haddock filets and pat down with the back of the spoon.
Bake at 425F for 7-10 minutes until fish flakes easily and crust is golden.
If needed, switch the oven to broil and broil the fish for 1 minute at the end to get that nice golden crust. If you do this, keep an eye on it and be careful not to burn/overcook the fish!
Remove from the baking dish and serve.
